According to Kim Luna, waffles are “supposed to be crispy, airy, and pillowy soft”. Kim is the co-owner of Batter Or Dough, a new waffle establishment up North at SM North EDSA. (He co-owns the establishment with his sister, Bea.) If we are to take Kim’s words for the truth, we’re happy to report that Batter Or Dough’s waffles far exceed the standard. Their waffles are satisfyingly crunchy on the outside, and soft, almost velvety inside.
On their menu is a spare selection of sumptuous waffles, from something as familiar as Cinnamon Sugar (P 135) to something as grandiose as what they call a Batter Bomb (P 200). There’s also the Wampler (P 150), which samples four flavors—classic, cinnamon sugar, Nutella, and maple syrup—in one package.
We ultimately settled for their Whipped Butter + Maple Syrup (this flavor, they tell us, is among their best sellers) for a couple of reasons: 1.) I’m nothing if not a champion of maple syrup, and 2.) their homemade whipped butter intrigued me.
Kim insisted that we also tried their Blended White Coffee, which goes out for as low as 145 pesos (14 oz).
The decision to pair Batter Or Dough’s waffles with specialty coffee is anything but arbitrary. The hints of nuttiness and chocolate in the brew are something that Kim, a self-proclaimed “coffee lover”, saw through. In our talk, it was clear that if there were only two things he knew like the back of his hand, they were waffles and coffee.So, we asked him. “What makes a perfect waffle?”
So, we asked him: “What makes a perfect waffle?”
Apparently, it’s all about the base. “The waffle base,” he notes. “Is the foundation of every waffle. If the base isn’t good, everything [is] going to be [just] the same. Even if the toppings are really good, it won’t come out as well.”
The first bite into our waffle supports this. Indeed, the hero of every carton that goes out of Batter Or Dough’s counter is the waffle itself. The bite is satisfying, the taste assured, and the texture distinctly pillowy. We have no question in our heads as to why in just over a month into their launch, patrons are already flocking in and raving about their waffles (and well, their space too).
Speaking of which, you’d be happy to know that Batter Or Dough has a decidedly muted, minimalist space that is perfect for a casual catch-up with a friend. The predominantly yellow interiors make for pretty pictures as is evident in the photos Abby took on the day of our visit.
